Handpicked on the 1st and 10th of March. Fermented with a portion (30%) whole bunch. Matured in seasoned French oak barriques for six months prior to bottling.
Beautiful deep colour for Pinot Noir with aromas of ripe black cherry, raspberry conserve and hints of petrichor. Flowing sweet fruit across the palate with chalky tannins providing structure and length. Pair with game meats and full flavoured cheeses. Will gain earthy/savoury complexity with careful cellaring for 5-8 years.
