This Rosé is a bit different, it’s an unusual blend of Cabernet Sauvignon, Sauvignon Blanc and Riesling – but it works. All three varieties were picked on the same day and left in the cool room overnight to chill the fruit right down. Whole bunched pressed together the following morning yielded beautiful pink juice. The ferment was started in a stainless steel tank then a week later transferred to old French oak barriques to complete fermentation.
Very aromatic with lychee, rose petal and red berry fruit notes. The palate is full flavoured but dry with a creamy mid-palate texture from the time spent in oak. A long finish with umami characters makes this Rosé perfect with summer salads, soft cheeses and charcuterie. Serve well chilled.
